Sun-Dried Tomato Hummus
- 1½ cups cooked Chickpeas (or one can), liquid reserved
- ¼ cup Sun-Dried Tomatoes
- 2 Tbsp oil (EVOO or from the oil-packed tomatoes)
- 2 Tbsp Tahini
- 2 Tbsp Lemon Juice
- 2 cloves Garlic, smashed
- Place all ingredients into a blender and process until smooth, adding cooking liquid to thin as needed.
