Sweet Poppy Seed Kale Salad
Ingredients
- ½ bunch Kale, shredded and chopped (about 4-5 cups)
- 2 cups chopped Red cabbage (about ¼ head)
- 2 cups Broccoli Matchsticks - (or a combo of broccoli and brussels sprouts)
- ½ cup Dried Cranberries
- ¼ cup Pepitas (raw or roasted & salted)
- For the Dressing
- ¼ cup Just Mayo (or other healthy mayonnaise alternative)
- 4 teaspoons Organic Whole Milk
- 1 tablespoon Raw Honey
- 4 teaspoons Apple Cider Vinegar
- 2 teaspoons Poppy seeds
Instructions
- Put the kale, broccoli, and cabbage in a large bowl.
- In a small bowl, whisk together the ingredients for the dressing.
- Dress the salad, to taste, then top with dried cranberries and pepitas.
