Pumpkin Spice No-Bake Granola

Each ingredient is specifically chosen for their amazing benefits:

Pumpkin Spice No-Bake Granola

2 cups rolled oats
1 tablespoon + 1 teaspoon pumpkin pie spice
1 cup toasted pepitas
1 cup pecans, chopped
1⁄2 cup almonds, chopped or sliced
1/2 cup raisins
2/3 cup unsweetened coconut
2/3 cup coconut oil
1 teaspoon liquid stevia (vanilla or pumpkin flavor)
1⁄2 cup honey or coconut nectar

In a large bowl combine all ingredients. Mix well. Enjoy immediately.  Store in an airtight container in the refrigerator.

Note: Instead of eating loose granola, you can form this mixture into bars. Transfer mixture to a 9- 1⁄2 x 11-inch baking dish. Spread evenly and pat down. Cover the pan and refrigerate several hours or overnight, or place in the freezer for 30 minutes. To serve, slice into 24 bars.
