Sweet Poppy Seed Kale Salad
 
Ingredients
  • ½ bunch Kale, shredded and chopped (about 4-5 cups)
  • 2 cups chopped Red cabbage (about ¼ head)
  • 2 cups Broccoli Matchsticks - (or a combo of broccoli and brussels sprouts)
  • ½ cup Dried Cranberries
  • ¼ cup Pepitas (raw or roasted & salted)
  • For the Dressing
  • ¼ cup Just Mayo (or other healthy mayonnaise alternative)
  • 4 teaspoons Organic Whole Milk
  • 1 tablespoon Raw Honey
  • 4 teaspoons Apple Cider Vinegar
  • 2 teaspoons Poppy seeds
Instructions
  1. Put the kale, broccoli, and cabbage in a large bowl.
  2. In a small bowl, whisk together the ingredients for the dressing.
  3. Dress the salad, to taste, then top with dried cranberries and pepitas.
