Peanut Butter Chocolate Fudge

  • 1 cup coconut oil
  • 1 cup unsalted nut butter (almond, peanut, or sunflower seed for a nut-free version)
  • 2 cups raw cacao
  • 1 cup dates (pitted)
  • 1 to 2 pinches of unrefined sea salt
  • Crushed nuts and/or Unsweetened Coconut Shreds (optional)
  1. Place dates in a bowl of warm water for about 20 minutes to soften.
  2. Remove the dates from the water and place them in a high power blender with all ingredients and process until smooth.
  3. Line an 8x8 baking dish with parchment paper and spread the mixture evenly.
  4. Sprinkle with Sea Salt and optional toppings.
  5. Freeze for 30 minutes or refrigerate for an hour before serving.
